Simple Egg Sandwich

 

I saw a funny thing today as I was leaving work.

It was a man.  Riding a unicycle.

 

But that wasn’t the really funny part.

He was – wait for it – walking his dog at the same time.

 

 

Now that takes talent.  Real talent there.  I only wish I had that kind of talent.

 

Which got me thinking….what are my talents?  I’m fairly decent artist with a pen.  I can do one heck of a cat “meow” (sometimes it even confuses Olive).  I can move my “pointer” toe independently of all the other toes.  I can make a sound that most closely resembles the love child of a chipmunk and a dolphin.  Which, I guess, isn’t so much a “talent” as just plain goofy.  But hey…whatever.

 

 

But riding a unicycle while walking my dog?  You’ve got to be joking.  I can barely ride a normal bike these days.  Let alone introduce unpredictable and easily distracted four-legged friends.  One frisky squirrel and it’s all over.

 

So I’m in the market for some better talents.  And I think, with this breakfast sandwich, I’m on the right track.  A delicious and filling meal in less than 5 minutes?

Oh yes, my friends.  Talent.  And now it’s yours too.

Simple Egg Sandwich
Adapted from Deb of Smitten Kitchen
makes one

1 large egg
1/2 tablespoon unsalted butter
1/4 cup cheese of your choice, I used a mix of parmesan and mozzarella
2 slices turkey bacon, cooked (I like to sprinkle freshly grated black pepper on the bacon as it’s cooking – try it!  Serious yum!)
2 slices bread of your choice
Mayonnaise, optional
Salt and pepper, to taste

With a fork, beat the egg until the whites and yellows are combined, adding the appropriate amount of salt and pepper.  In a medium skillet, melt the butter and add the egg.  Swirl the pan to evenly distribute the egg and cook for only a few minutes until the top is set.  Add the cheese in the middle and fold the edges around the cheese to form a square with egg on the outside and cheese in the middle (see image, above).

Place the egg square on the mayonnaised (totally a word) bread and top with the bacon.

  1. Tried this the other night and loved it!! It was so fast and easy and I the cheese in the middle is perfect. I will be doing egg sandwiches this way from now on for sure! Kinda makes me think I could tackle crepes one of these days too 😀
