Grilled Chicken Salad


I did an amazingly awesome thing the other night.


I went with a friend to see another friend’s Roller Derby team.  It was my first roller derby and it was, to say the least, wicked fun.  Those are some strong, powerful women and I’m a big fan of them and the derby.  And really, roller skates in a contact sport?  Guaranteed to be a good time.



But that wasn’t the amazingly awesome thing I did.


My friend and I went out to dinner afterwards, partially to catch the end of the KU – Ohio State game and partially because we were starving.  Dinner was good and the game was good.


We left and I drove home with 18 miles to E.  Luckily my town isn’t so big that the drive home (and to the gas station on the corner) left me with 6 miles to E remaining.



It was only when I popped open the gas tank and reached for my wallet that I realized what an amazingly awesome thing I had done.


My credit card.  Left.  At.  The.  Restaurant.


And I knew exactly where at the restaurant it lay.  Nestled between my copy of the receipt and their copy.  Packed safely in the little black receipt folder; abandoned on the table.



6 miles to E isn’t really a bad thing.  Especially when you live down the street from the gas station.  It’s enough to start the car and drive to the station with several miles remaining.

It’s a bad thing when you leave your card 12 miles away.  It’s a bad thing when you don’t carry cash.  It’s a bad thing when it’s 10:30 at night and you have 6 miles until your car is limping along on fumes.  It’s a bad thing, overall.


It’s at this point that my stomach dropped and all the air from my lungs were sucked out, leaving me very close to a panic attack and tears near.  I sat silent in the car for what felt like 10 minutes making every attempt to stay calm.  I looked at the clock and willed my mom to still be awake.  I called her cell to avoid waking the entire house and prayed.



All I can say is thank God I have the best parents in the world.



Grilled Chicken Salad

2 cups mixed greens
1 medium radish, sliced paper thin
1/3 cup chopped fresh asparagus
One small tomato, sliced
1/3 cup frozen green peas (you can thaw these out, but I like them still frozen)
1/2 cup croutons
1 grilled chicken breast sliced (leftovers from grill night)
Favorite dressing (mine is balsamic vinegar, but a squeeze of lemon and a drizzle of extra virgin olive oil would be lovely)

Mix together the greens, sliced radish, chopped fresh asparagus, sliced tomato, green peas, and croutons.  Top with the grilled chicken and drizzle on the dressing.
